ago provided Baird Brewing a 15-liter French oak wine cask that previously held Beaujolais Nouveau wine. We have used this cask to age a portion of our Dark Sky Imperial Stout. Well, the marriage between the
wine cask and the Imperial Stout has proved a joyously fruitful one. The piquant tannins from the wine and wood as well as the vinous acidity have contributed further layers of complexity to an already
robustly intricate beer. Popeye will be serving this wine-cask aged Dark Sky Imperial Stout on Thursday evening, February 1. Reservations are required. Please contact Popeye directly at the following:

Also, don't forget about the upcoming Baird Big Beer Winter Weekend to be held at the Fishmarket Taproom this Saturday and Sunday (February 3-4). Six Baird
Strong Ale Series Seasonal brews will be served on tap all weekend and paired with some of the world's finest cheeses as well as with a host of original Taproom specialty dishes. In addition, due
to popular demand, The Taproom again will be exhibiting a wonderful collection of ceramic Japanese beer vessels specially selected by Robert Yellin of the Robert Yellin Yakimono Gallery. Pieces on display
also will be available for purchase by interested patrons.
